We don’t just tell you how to do it, we show you.

We have a state of the art research and development facility that allows us to produce and replicate almost any conceivable configuration or challenge. If your production requirements call for a complicated process involving engineering or preparation, we can do the work ahead of time. This helps us to test and manage outside variables in a controlled environment. We can then take our findings and re-apply them anywhere in the world.

This is one of the many ways we ensure quality while meeting the needs of our clients.

Insect Baking

Insect Baking

Yes, you read that right! This is a trend that is growing all over the world and we were exposed to a unique line of products by a world leader in Finland. We brought this knowledge back to Canada and are excited to share with you.

It’s high protein bread manufacturing with help from insect flour and is a very intriguing way of increasing protein in breads and buns while not affecting the taste or texture.

(*Please be aware, if you have a shellfish allergy, you may have a reaction to our insect-baked products.)

About Artisan Baking

“I consider  Artisan bread as edible art. It should be used as a vessel of discovery. Formulated from simple ingredients (flour , water, leavening agent and salt). Good bread should create a harmony with all food groups that it is exposed to.  A carrying body made of crust and crumb structure to spawn a symphony of flavors and culinary experiences.

I compare it to a treasure hunt for your palate that will provide well being for body and soul.”

Heinz Hubbert,
Owner & Operator of Badger International

History of Bread

The first traces of bread-making was about 14,000 years ago when the first loaf was created by the Natufians, located where the country of Jordan is today.

The Egyptians officially started making bread with leavening fermentation while the Greeks already documented 70 different kinds of breads (the Greek were also the first ones to fancy sweet white breads). They were then conquered by the Romans and from there bread spread throughout the ancient world.

Today our modern knowledge and expertise makes it possible to create breads for every culture, religion, dietary needs, medical conformations or just for enjoyment!

Baking is a Science

Any mistakes made in the bread’s production is usually difficult to fix and carry on to the end of the bake (to the baker’s embarrassment)!

To succeed as Artisan Bakers, we need to be educated in temperature, timing, hydration, ingredient knowledge, chemical combinations as well as physical elements such as the mixing process. As Artisan Bakers, we have developed the hand skills that are needed to shape and mold breads, buns, pastries and cakes to achieve hundreds of variations.
